
YES, this is a post about chicken wings. I said I wouldn’t post many as I was cooking so many, new running total is 292 after this cook.
I’ve done a few chicken wing cooks this year now and the last time I did 2 other flavours as well as the Fools Gold & Parmesan.
I’ve been experimenting with Cherry Cola wings but after 2 different batches I decided they were not working. But that doesn’t mean I’m done with flavours.
I’ve now done 2 batches of Soya spice wings (including in this cook) which have been going down well. And I wanted to try other things.
So, this cook was 4 different flavours:-
Fools Gold & Parmesan
Suya Spice
Chilli & Lime
Chinese Salt & Pepper
And the all went down a storm!
The Salt & Pepper ones were delicious, I crave this type of wing so I enjoyed them.
The Suya spice ones are just the right level of heat, a nice spicy that lingers but doesn’t keep climbing. And you just want to eat more of them
The Chilli & Lime ones, they do keep climbing, right on the edge of my level but the heat, once it hits its limit, it comes down fairly quickly. Certainly a lip tingler.
I’m still playing around with how to coat the wings to get them crispy and not looking powder coated.
I also cooked a batch of plain chicken wings in the oven (I had more wings than were needed) and tossed these in garlic oil and parmesan. I think they needed more oil for flavour but they were nice and crispy, maybe this is how I need to do them all, plain and then coat in rubs.
I’m cooking more wings next weekend, just the fools gold ones, but it will take me over the 300 wing mark for the year so far.
