Chicken Kebab in homemade flatbread

Not quite my last cook of 2023, a Chicken Kebab with homemade flatbreads, just for the family. Yes, the Kellybab is still my go-to for this

Seems that the end of the year is always a bit of a rush and this cook was no exception to that.

I planned to do this the weekend before but other things got in the way, then before I even prepped the meat the weekend had changed on me and time was tight.

Friday afternoon, I grabbed a bowl, put in the last of the oil we had hoping it was enough (see just hadn’t done my usual planning), added a healthy amount of Angus & Oink’s The Kellybab Rub (not even using fresh ingredients now!), mixed away so that everything was covered in a good amount of oil and rub, added some clingfilm over the top of the bowl and popped into the fridge.

I then went away for the night, had a lovely evening away, a relaxed morning, went to the cinema, kinda forgetting that I had this kebab to cook at home and that it would take time, I’ve done this before, why did I not think about this when booking the cinema for the afternoon?

After the cinema, we raced home. I got the BBQ lit in record time somehow (the coal just caught well) and so I set about to building the kebab on the skewer, taking my time a little to try and balance it, got it onto the BBQ with the thought that it might be ready for 7-7:30 but it was going to be a push.

I had a Meater probe in at each and today they were possibly the most accurate I’ve had them on ambient temp almost instantly. Usually they take time to read the same as the BBQ but they were great and gave me cooking times very quickly. I think 7pm is most very likely. I had visions before we got home that this was going to be 8-8:30 realistically so I am very happy, things have just panned out well.

My wife then makes some homemade flatbreads, her recipe changes nearly every time in some form so I can’t tell you what was in them other than they had fresh garlic in them and some Angus & Oink Garlic Butter rub as well.

The kebab cooks lovely, some great crunchy bits on the outside, juicy meat and full of flavour that is almost exactly the same as if using fresh ingredients.

Flatbreads, salad, garlic mayo. It could almost be from the local takeaway but it’s far better.
