
SParky BBQ is not slowing down in 2023 – Ribs & Wings for friends.
This weekend gone in November we had 2 friends over for dinner. They have both been asking to come for BBQ food and we provided a veritable feast for them (and some left overs for us for a couple of days).
A mad dash to Costco in the morning for the wings (we were going to the local butcher but also needed to go to Costco for some other items that we had no other time to go) and back home in time to get the BBQ fired, the ribs prepped & rubbed before they HAD to be on the smoker.
Ribs were coated with mustard to help the rubs bind, then Big Poppa Smokers ‘Competition Stash‘ as well as Big Poppa Smokers ‘Sweet Money Hot’ rubs applied. A good coating of each, patted down then just a little more of each.
Into the smoker at 275F for 2.5 hours (I should have stuck to 250F)
After 2.5 hours I removed each rack and wrapped in foil, the base of which has brown sugar, honey and butter, on top of the ribs I applied some more brown sugar and honey, added some apple juice and wrapped tight. Back on the smoker for 2 hours.
With 30mins to go I opened the foil, bones were nicely pulling back. I drained the liquid and placed back on the smoker for 30mins without closing the foil.
After that, they were more than ready to come off. I added some Blues Hog Original sauce and brushed the ribs with it. Wrapped them up again and put into my cool box while I cooked the wings.
I don’t need to tell you how I do these wings, you’ve got it by now. EVERYONE who asks for wings wants this recipe so Im sticking with it for cooks for others, I’m planning different ones for family cooks.
350f for 35mins, nice and crispy.

My wife has also been busy making garlic butter Yorkshire puddings (damn these were fine) and potato dauphinoise – so creamy and full of garlic.
Friends were stuffed, had ribs for 3 days for lunch.
I love ribs, I could cooked these every week and not get bored, but there are so many other things to cook….
