
With our final house move edging closer in 2021, the freezer needed emptying. Time to cook some BBQ ribs!.
I had 3 racks of Swift ribs left in the freezer as well as some Sausage Man sausages that just had to go as our move looked very likely to take place shortly (It didn’t it got held up another 4 months).
We invited the neighbours round as there was just too much for 4 of us.
Swift spare ribs are the best I’ve cooked with, always juicy and tender.
I got to prepping, removed the back membrane and covered with a light coasting of mustard as a binder.
I then used Angus & Oink Sweet Bones & Bacon rub as the seasoning.
Drum set at 250f, I got the racks in to the smoker.
The method of cooking ribs is 3,2,1. 3 Hours smoked, 2 hours wrapped, 1 hour open.
I have found that this is way to long a cook and over cooks the ribs.
After just 2.5 hours, the ribs were ready to wrap. Had a good bark on them and now needed to get tender. And this time they needed to be REALLY tender.
I had someone that just needed them to fall apart and melt, so along with the usual brown sugar & honey and a little apple juice, I add butter, more than I would usually but it does what I need it to.
1.5 hours later and the ribs are done, they need about 30mins open to set the bark again and then they are looking fine.
Sausages cooked as well, buns at the ready and away we get to eating.
The ribs are sublime, so juicy and tender, flavourful and melt in your mouth amazing.
I’m sticking with this brand for ribs from now on if I can.
